Ingredients:
- Sweet red pepper, cored, seeded and julienned
- Olive oil
- Garlic, chopped
- Tomatoes, cored and cut into 1/2-inch cubes
- Green olives, pitted and chopped coarsely
- Capers, drained
- Fresh thyme leaves, chopped
- Salt
- Ground pepper to taste
- Butter
- Bay or sea scallops, cut in half crosswise if very large
- Lemon juice
- Basil or parsley, coarsely chopped
Instructions:
- Heat olive oil in a large skillet. Add garlic, tomatoes, red pepper, thyme and capers. Season with salt and pepper and cook for 5 minutes. Remove from heat.
- In another skillet, melt butter until bubbling. Add scallops and season with salt and pepper. Cook for 3 minutes, stirring occasionally. Make sure you do not overcook the sea scallops.
- Sprinkle lemon juice and add basil. Cook and stir.
- Divide and spread the tomato mixture onto the serving plates. Divide the scallops as well and distribute over the tomato mixture.
- Serve while hot.
