Ingredients:
• Arugula – 200 g
• Pine nuts – 60 g
• Eggplant – 400 g
• Cherry tomatoes – 200 g
• Balsamic vinegar – 60 ml
• Olive oil – 80 ml
Directions:
- Wash and dry arugula.
- Chop eggplant into slices and fry in olive oil. It should not be a lot of oil, just a little.
